Fermented Salsa

  • 6 Roma Tomatoes, chopped and use the seeds & everything
  • Celtic Sea Salt (enough to be a good saltiness)
  • 4 pressed garlic cloves
  • 1 chopped onion
  • 1 bunch cilantro
  • Juice of one lime
  • 1 dried Anaheim pepper turned red grinded in coffee grinder
  • Dash of cayenne (I wish I would have made mine spicier)
  • (optional: chile powder & paprika)

Fermented Salsa Recipe

#1. Chop and mix all ingredients together

#2. Mix in 1/2 cup whey or more (you want there to be enough liquid)

#3 Fill a jar with some room at the top

#4 Top with 1/4″ olive oil to separate the salsa from the air and seal the jar tight

#5 Let ferment for 3-4 days

***You can watch videos on youtube to get your own ideas, and how to get your own whey, and of course taste your salsa as you make it so you know it is going to be good!
